Typical preparation method used by artisan fishermen, where the product goes directly onto the hot coals, giving it texture and a noticeably smoky flavor. Reminiscent of the rustic dishes prepared by local fishermen at the end of a long working day, served with milcaos, potato pancakes from Chiloé, creating a deep range of flavors rooted in our southern Chilean culture.
Escaleras de Empedrado. A tribute to a unique spot in our country and the first Pinot Noir planted on slate terraces, providing the warmth of red fruit and earthy notes that will provide a pleasant accompaniment for enjoying this fish. With a unique elegance, this wine has a long, complex finish that brings out that typical fruitiness of our Pinot Noir.
