A dish inspired by the classic osobuco au jus, prepared for decades in homes in the Chilean countryside to provide warmth and energy on those cold days.
Manso de Velasco. Governor of Chile and founder of Curicó, an important figure in our Creole culture and the ideal candidate for lending his name to one of our great wines. A faithful example of a Curicó Valley Cabernet Sauvignon, from vineyards over 100 years old. On the nose, its black fruit aromas with hints of leather reflect maturity and the time spent in French oak barrels, although the palate is where it shows its real potential. Complex, with soft, rounded tannins, there’s also an intense fruit that gives shape and an uplifting note of spice. It has a long, persistent finish. Ideal for accompanying the flavors of a dish that is so typically Chilean.
